Finca La Estacada 6 months inside the cask

FINCA LA ESTACADA has 278 hectares of vines that are all grown close to the winery, with the farthest at a distance of 7-10 Km. Of these 278 hectares, 106 of which are of Tempranillo grapes, of an average of 25 years, 59 of Cabernet, 32 of Syrah, and 8 of Merlot. Also, in recent years the vineyard has been extended with new varieties such as Cabernet Franc, Cariñena, Malbec and Petit Verdot.
The use of varieties sucha as Tempranillo, the most prestigious in Spain, Merlot and Cabernet Sauvignon, renowned the world over, and the newcomer Syrah, star of the Rhône and Australia, is not just a fashionable choice. FINCA LA ESTACADA has gradually abandoned the traditional image of head-pruned vines that has characterised the wines from Castile-La Mancha, turning instead to the geometry of the trellis system with a drip irrigation method that ensures a balanced water supply. This noticeably improves the quality of the grape, as it increases the amount of sunlight the vines receive and the distribution of production. It also improves the ripening process by producing a larger leaf surface, and in the final stage makes it possible to mechanise many of the processes required to tend to the vines. The soils are clayey with a limestone substrate, poor but woth sufficient mineral resources.
Ripening takes place without any problems due to the long hours of sunlight to which vines in Castile-La Mancha are exposed, but with the peculiarity of being situated in the highest part of the region. This allows for a slightly longer ripening process than in the rest of La Mancha, preserving certain acidity levels and fruit notes that would otherwise be lost with a higher average temperature.
The average density of the vineyard is between 2000-2500 plants per hectare, depending on the type of grape and their location. As a result we obtain a production per hectare of between 5000 and 7000 Kg of small grapes.

Alfredo Santamaría 2007 Crianza

Features
After grapes are harvested by hand from 65 years old vineyards, a traditional maceration with their skins takes place during 15 to 20 days, depending on the polyphenols richness of the harvest. Alcoholic fermentation at a controlled temperature, always below 30ºC, followed by a malolactic fermentation at 28ºC. A racking and a fining process that make the wine limpid and stable. Finally, the wine is settled at 5ºC aprox. after which it is ready for aging. The aging period consists on at least 13 months in American oak barrel and 12 months in bottle, always in the best conditions of temperature and moisture. Bottling takes place without any aggressive process, for this reason it may contain sediments, being decanting recommended.

Trascasas is vinificated only when vintage is exceptionally good. After grapes are harvested by hand, a traditional maceration with their skins takes place during 20 days, depending on the polyphenols richness of the harvest. Alcoholic fermentation at a controlled temperature, always below 30ºC, followed by a malolactic fermentation at 22ºC. A racking and a fining process that make the wine limpid and stable. Finally, the wine is settled at 5ºC aprox. after which it is ready for aging. The aging period consists on at least 18 months in European oak barrel, most of them French, and 18 months in bottle, always in the best conditions of temperature and moisture. Bottling takes place without any aggressive process, for this reason it may contain sediments, being decanting recommended.

Sierra Cantabria Reserva 2006

Own estates in San Vicente de la Sonsierra. Handmade harvest with a bunch selection in optimum conditions of ripening and health. Traditional, 100% destemmed. Temperature-controlled fermentation between 28 and 30º C with selected yeast (Saccharomyces cerevisiae). Extended post-fermentative maceration on the skins for 14 days, with two pump-overs daily in the beginning with a light pump-over daily at the end. During the ripening, overpumpings' frecuency is decreased according to the process advances, in order to prevent the removal of vegetables and bitter characters. It remains inside casks of French (50%) and American (50%) oak, 225 l. capacity, for 18 months. Racked every 4 months. Bottle: Without filter bottled in January 2009.

Tasting
View: Bright red-ruby tile and good layer.
Nose: Intense, complex and warm, with elegant aging bouquet and ample range of sensations well joined perceiving fresh and ripe fruits notes combined with spicy, vanilla and toasted touches.
Mouth: Velvety, complex and full, developing powerfully well ripe red fruits notes. Good structure and tanin balance providing with a powerful and elegant structure. In post-taste notes of high roast, vanilla and slighty balsamic touches are appreciated powerfully standing out red fruits sensations. Large and persistent ending.

200 Monges Reserva 2004

Features
This wine is a result by the selection of three varieties of grape from a vineyard does not exceed 10 ha. Age average is over 30 years.
It ferments inside Allier wooden casks for 11 days in a temperature between 24º and 28ºC, with the presence of skins for 25 days more, then noble tannins are obtained which give rise to a long-lived resistence of colour for all wines range.
This wine has been moved up three times a day and clarified by periodic decantings. It is aged for 20 months at least inside a new cask made with French, from different origins, and American oak; it rests a time into a tank until its later bottling where stays, depending on different years, 16 months at least in wine racks before marketing.
It is recommended to uncork and decant 30 or 45 minutes before serving to appreciate its total aromatic potential because it is a reserve wine. It has been botlled with any kind of filtration.
It is the symbol of the winery.

Palacio de Bornos La Caprichosa 2010

Features
La Caprichosa is elaborated exclusively with Verdejo grape from old vineyards, sowed in Gobelet system on gravelly soils, with low fertility. Harvest is made by hand, with a first selection of grapes in the own vineyard and then another one during its entry into the winery.
After grape stalking, a long after-fermentative maceration is carried on under low temperature (10ºC), bleeding after the bud must, which will be the only one used for this wine. The slow fermentation is made into stainless steel tanks, again under low temperature (14ºC), to keep the aromatic intensity. When the fermentation is over, the wine stays for three months on its lees, which are stirred periodically to achieve a major character and greasiness.
In its making the aromatic varietal elegance is preserved, as well as its structure and freshness, while the work with thin lees has stimulated the power in nose and the roundness in mouth. The result is an intensive and serious white wine, caressing and solid, full-bodied, expressive in flavours and very suggestive as a whole.

Rolling Chardonnay 2009

Features
It comes from a relatively young area within the Australian outlook, Central Ranges. It is elaborated by Cumulus Wines, a winery owned the Portuguese family Berardo, which it is famous for a constant technologic innovation and its high precision in all elaboration stages.
Fruit is harvested during early cold hours. When they come at the winery, grapes are pressed softly. Grape juice is paled to leave a little quantity of solids and the fermentation starts into 15-18 degrees. After fermenting, wine is shoaked on yeast lees for some months  to promote the resulting yeast autolysis, which give the creamy and smooth taste of wine. Only a little portion of the mixture is fermenting and aging with French oak.

Tasting
View: Beautiful yellow colour with bright lemon glitter, very bright.
Nose: Remarkable intensity. Fresh stone fruits aroma (white peach and apricot), lemon, melon and tropical fruits (lichee and passion fruit), with superposition of creamy notes and yeast taste typical from the fresh Chardonnay climate.
Mouth: The crunchy citricus skeleton accepts ripe melon tastes on palate. The palate sensation with texture, smooth and oak suggestion adds weight and lenght on the palate. Large, some greasy and a very good integrated, heavy sharpness which confers freshness. It finishes with a large and pleasant fruit finish, leaving spicy and citricus peel memories.

Tasting
View: Intense red-cherry colour. Clean and bright. Medium-high depth.
Nose: Varietal complex aromas of ripe red fruit, redcurrant and raspberry, supported by fine spicies and liquorice. Balsamics make their way, along rosemary, rockrose and pepper notes.
Mouth: On palate it is silky, easy, without becoming complex, it has a backbone. Fresh, leaving an aftertaste of red fruits' yogurt. Good weft and lenght.

Viña Bayona Crianza 2008

The winery was founded in 1940. It has 7 Has. in the locality of Titulcia, which allows to irrigate its grounds by Tajuña river, centenary grounds in the cultivation of stocks on limy soil. It has an ageging winery where the French and American oak Bordeaux casks settle; crianzas age into them, which can come to be until 21 or 28 days in contact with the skins (soaking), ir order to extricate the most of aromas, pigments and tanins, which keep the colour structure through the aging. Crianzas are bottled into the 225 l. American and French oak Bordeaux casks, where remain for 8 to 10 months; once this stage finishes they go to the bottling where the aging goes on inside the bottle remaining a minimum of 12 months, where they gain bouquet.

Tasting
View: Intense red-cherry colour and covered with violet glitters.
Nose: Very expressive, it denotes the great aromatic charge owned the varietals which make up it, stressing violet floral and blackberry and raspberry fruity aromas.
Mouth: It is pleasant and warm on the palate, with a great persistence and a smooth harmony between tannins and sharpness, with a clean and aromatic finish, where the red fruits jam and vanilla spicy notes are stressed.
